We started Taste of New Mexico to prove to ourselves, crazy wild dreams can come true.
MEET ROBIN & ROSIE
We are a mother and daughter duo, Robin and Rosie. Robin was born and raised in the USA growing up in Albuquerque, New Mexico. Home of the beautiful sky, a mix of culture and amazing food!
Rosie born and raised in Ayrshire has always had a passion for cooking so she went on to study hospitality. Rosie is currently the head chef.
Together we had this crazy idea, “Let’s buy a food van and sell those amazing tacos you love from home!”
So we did it, went through all the processes and got ourselves out there! Our food van started out on a small industrial estate, then we moved on to another and finally hit the big time being aloud at Irvine Beach Park.
We had a brief spot in the Habour Lights and now have our sight set on opening a cafe American style diner serving our unique New Mexican food.
We’ve sold hundreds of tacos, met the most amazing people, and have continued to grow every day. In the meantime, we are working from our prep kitchen which is a better way to meet the demand.
We started Taste of New Mexico to offer something different to the community and prove to ourselves, crazy wild dreams can come true.
We look forward to hosting you in our new cafe/diner at the end of the year! Until then we hope you eat plenty of tacos from Taste of New Mexico.
